This is a fancy bird, the young version of a kalapati (pigeon). You don't see this at your local karinderya. This is what you might find in a high-end Chinese restaurant. It's the "pang-mayaman" version of a bird dish, not to be confused with the pigeons you see in the plaza.
From Spanish "pichón" (young pigeon).
Often considered a delicacy.
